shakshuka

What could be better than eggs+ jalepeno peppers+garlic+tomatoes+unmentioned spices?
my favourite items mixed together to make a killer breaky.  Thanks to Smitten Kitchen for the recipe.

Saute some onions and jalelpenos in some olive oil,
then add a couple of cloves of Garlic,

toss in a teaspoon each of paprika and cumin,
stir for a couple of minutes
then in goes the can of whole tomatoes,
give them a mild squeeze as they go in juice and all.

add a 1/2 cup of water and simmer till it thickens a bit.
maybe 15 minutes.

after it is thickened a bit lay in some eggs evenly spaced,
and don't drop them in or the yoke will get all over the place,
lay them in like a mother chicken.

put the lid on to steam them for 6 minutes or so,
baste the eggs every so often with the tomato concoction.

them bath generously with feta and some fresh parsley,
and your ready to serve.
