This was a meal I made last week one night just for me and my husband.
We've started trying to eat vegetarian 4-5 nights a week.
This is balsamic marinated portabellas, layered with oven roasted tomatoes, brie cheese and cilantro.
And with that is ginger and garlic risotto, with edemame and cilantro!
It was delicious, I've loved adding edemame (whole soy beans) to my food lately,
PC sells it shelled and frozen, great way to add some good protein to vegetarian meals!
