This is one of my fave dish's and it is so easy.
I saute 2 to 3 lobsters (shells removed) in butter and garlic,
I boil 4-5 road apples, mash and add salt, butter, pepper, cream,
then I spoon the lobster-garlic-butter over top of the mashed dirt apples.
Sometimes I carve a hole in the mound and pretend it is a volcano of lobster meat erupting and i imagine the volcanic ash cloud from the lobster halting all flights heading to Europe.
the pigment form the lobster make the butter sauce a beautiful reddy orange,
the texture contrast of the dirt apples and the lobster is Wunderbar.
