Start by defrosting a roll of puff pastry onto a pizza stone, or a baking sheet.

Chop up some zuchs, tomats, and leeks



Fry the leeks with a little butter until soft.

Spread the puff pastry with some pesto of your choice,
cover with leeks, then arrange the zucchinis and the tomatos.
Sprinkle with fresh Basil and Chevre.
Then bake at 400 until browned and puffy (approx 25 min)



1 cup olive oil
1/3 cup apple cider vinegar
1/4 cup tamari
S&P
(taste to make sure, add more of something if needed!!)

Then pour on a nice mixed veggie salad!
