ingredients:
1 cup butter, softened
1 cup brown sugar, packed
1 egg yolk
2 teaspoons vannilla
1 1/2 cups gluten free flour blend #3*
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoons Flour blend #1*
1/2 cup + 1 tablespoon Semi sweet choco chips
1/2 cup sliced almonds, toasted
1. preheat oven to 350F
2. cream butter and brown sugar together until light and fluffy
3. blend in yolk and vanilla, scraping down the side of bowl as needed
4. in a separate bowl, sift together flour blend, salt and cinnamon. blend into wet ingred.
5. lightly grease a 9x9 and dust with flour blend #1. spread batter in pan eveny
6. Bake for 20-25 minutes, or until edges are golden brown and centre is somewhat firm.
7. remove from oven, sprinkle on choco chips and return to oven till melted (approx 5 min)
8. spread the choco evenly and sprinkle with toasted almonds
9. allow to cool before cutting
make a pot of French Press, possibly Guatemal Antigua, take a slice up to the office and eat it with your spouse. enjoy the noise they make while eating it.

white rice flour 1 3/4 cups
Potato startch 2 cups
tapioca starch 1 1/2 cups
YEILD 5 1/4 cups

white rice flour 3/4 cup
potatoe starch 4 cups
Guar Gum 5 table spoons
Albumen (powdered egg white) 1/2 cup
YEILD 5 1/2 cups
