Udon noodles make for a quick and delicious dinner.
All you need are good broth, fresh veggies, and a couple packages of fresh udon.
We cooked chicken to start our soup, added stock, hoisen, sesame oil, fish sauce, tamari, and rice vinegar, threw in chopped peppers, snap peas, scallions, and fresh herbs, and right before serving stirred in the udon noodles.
Top with more herbs, chopped peanuts, and plain yogurt for a bowl full of delicious.
