Pork+Beans | Thai Style

Coconut Kaffir Lime Leaf Rice
with Thai Pork and Long Beans


COCONUT KAFFIR RICE
Make rice as you would but
replace 1 cup of water with equal portion of Coconut milk
add 3-4finely diced Kaffir Lime leaves ( purchased frozen or dried at asian food stores)
It is an amazing switch up for boring white rice.


THAI PORK WITH BEANS


3/4 cup Thai Yellow Curry paste
you can buy this stuff in most good grocery stores, but I recomend making it and having the ingredients in stock doesn't take much.  As well once you have these basic asian ingredients, there is so much you can do.
below is the recipe for the Paste I make
  • 1/2 to 1 stalk lemongrass, minced
  • 1-2 yellow chilies, sliced ( substitue 1-2 red chilies OR 1/2 to 1 tsp. dried crushed chili)
  • 2 shallots, sliced (or 1/3 cup chopped cooking onion)
  • ginger, sliced
  • 4 cloves garlic
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • 1/2 tsp. cumin seeds
  • 1/4 tsp. cinnamon
  • 2 Tbsp. fish sauce
  • 3/4 tsp. turmeric
  • 1/3 tsp. pepper
  • 2 Tbsp. brown sugar
 Stir fry the Paste in some oil till frangrant,
then add the sliced Pork, tenderloin, or I used Pork steaks sliced against the grain. 

fry till almost done,
add green beans, as many as you like,
add remainder of the Coconut milk from the rice, so 1/2 cup or whatever is left
2 tablespoons of Fish Sauce (available at most good grocery stores)
1 tablespoon sugar
S+P to taste.
