Amazing Curry Dinner


Chana Masala

This is one of the easiest dishes to make
and you probably always have everything on hand.
If you don't, I recomend spending the $4 and keeping everything on hand
for a quick Indian Craving while watching wednesday night TV>

you'll need

a Can of Chickpeas
one large onion
olive oil, or ghee
4 cloves of Garlic
Lemon Juice (about 2-3 tbls)
1 tsp coriander seeds
1tsp cumin seeds
1 tsp garam masala
1 tsp curry powder, 
2 inches of fresh ginger
some spinach (i use chefs frozen)
and some fresh coriander

in small pan roast seeds till they start to pop,
then grind in your mortar and pestle
fry the chopped onions in the olive oil or ghee
add garlic
add ginger
add ground spices
garam masala and curry powder
add chick peas liquid and all
add lemon juice

cook up and let it reduce and get thicker,
add the frozen spinach
(if using fresh, save it almost done)
add s+p to taste
and mix in lots of fresh cilantro before you serve.
amazing side, or even by itself.
