VEGETABLE MEDALLIONS WITH PORK STEAK AU JUS


This recipe is inspired by Ikea.

This is also a variation of a recipe I found online,
over at gratineeblog.com
I adapted it to be gluten free and dairy free as well

VEGETABLE MEDALLIONS

Steam a cauliflower
shred a couple of red potatoes
dice up some green onions
and wilt some spinach

mix together with some corn meal (1/2 cup)
fry some onions in Olive Oil until caramelized and throw in mix
add a couple of whipped eggs

and 1/2 cup of fresh parmesan cheese
(I know i said this was dairy free, but apparently the amount of lactose in parmesan is
so small that someone lactose intolerant isn't affected...victory!)

salt to taste (before you put the eggs in)
a pinch of smoked paprika
a douse of cumin
a healthy pinch of smoked pepper
some olive oil.

mix it up and put into well greased muffin tins

preheat oven to 375, and cook for 25-30 minutes


PORK STEAKS

my fave
these are hormone free Pork steaks from the Superstore,
lots of marbling, but the portions are small so I say, why not?
i cover both sides with Essence*

Pan fry in Olive oil.
remove
and try not to eat.

SAUCE ( GLUTEN FREE)

I throw in some fresh garlic into the magic bits stuck to the pan.
a little (butter) if you can handle it. or some white wine would be great.
deglaze and add some rice flour mixed with water
some s+p a little love, I threw in a squirt of lemon juice,
would have used worcestershire or soy sauce, but the gluten is my nemesis today.

sprinkle some more parmesan on it and lick your fingers.

assemble.
call the kids in.
eat and listen to the noises.
